Making a specific steak on a pellet grill.

1. Season the steak

Liberally season the whole steak, top, bottom and sides. I usually stick it. In the fridge overnight at this point. I find that a little aging increases the flavor and the quality of the final steak.

2. Preheat

Preheat your pellet grill to 225 degrees, if you have a Traeger and it has super smoke, now is the time to use it.

3. Smoke the steak

Put the meat on the smoker, and cook it until it gets to 120 degrees internal. Once it reaches that, take it off and let it rest for 5-10 minutes.

4. Increase the Traeger temp

Increase the temp to 450 degrees, cook it until it gets to 125-130 degrees for medium rare (it will continue to cook a little after you have pulled it off). Pull it off the grill and it will need to rest for 5-7 minutes. You can also optionally add a pad of butter, or garlic butter to the top.

5. Enjoy!

The last step and arguably the best, because you get to eat a great steak.
